Hestia's Corner

Hestia planted a zucchini plant. Just one. Hestia gives zucchini to her neighbors until they run and hide when they see her approaching. Hestia makes zucchini bread. Neighbors are thrilled to see her again!
Hestia's Zucchini Bread
3 cups flour
1 cup packed brown sugar
1 teas baking soda
1 teas baking powder
1 teas salt
1 teas cinnamon
1 cup corsely chopped walnuts or pecans
3 eggs
1 cup vegetable oil
1 teas vanilla
2 1/4 cups grated zucchini
Preheat oven to 350 degrees and grease two loaf pans. Mix dry ingredients in a medium bowl. Set aside. Beat eggs in large bowl, beat in oil and vanilla. Add zucchini and stir until well-mixed.
Add dry ingredients slowly into wet ingredients, stirring just until mixed. Do not beat! It will be gooey.
Pour batter into pans equally and bake for approx. 50-60 minutes. Bread is done when toothpick stuck into center of bread comes out clean.
Cool on rack and spread the joy to your friends and neighbors!
